Apple Cinnamon Sourdough Buns
Two delicious versions of one delicious apple cinnamon sourdough bun recipe.
Ingredients
Dough Ingredients:
- 113 gm. Sourdough Starter
- 118 gm. Water
- 1/2 tsp. Instant Yeast or Active Dry Yeast
- 420 gm. Bread Flour
- 120 gm. Wheat Flour
- 1/2 c. Melted Coconut Oil
- 168 gm. Honey
- 2 Eggs
- 1/2 tsp. Salt
Cinnamon Sugar Filling (Regular Option):
- 1/2 Stick Softened Salted Butter
- 1 c. Brown Sugar
- 4 tbsp. Cinnamon
- 2 sm. Apples Grated or 1 lrg. Grated Apple
Cinnamon Sugar Filling (Healthier Option):
- 1/2 Stick Softened Salted Butter
- 1 c. Trim Healthy Mama Gentle Sweetener (Alternative Sugar)
- 4 tbsp. Cinnamon
- 2 sm. Apples Grated or 1 lrg. Grated Apple
Baking Ingredients:
- Eggwash (1 Egg and 1 to 1 tbsp. Water)
- Heavy Whipping Cream
Cream Cheese Topping:
- 4 oz. Soften Cream Cheese
- 1/4 Stick of Soften Salted Butter
- 1/4 c. Powdered Sugar
- 1/2 tsp. Vanilla Extract or Vanilla Paste
Instructions
- In the bowl of a stand mixer, combine sourdough starter, water with added yeast bloomed at 95 degrees Fahrenheit, flour, honey, water, eggs, melted coconut oil, and salt.
- Mix everything in a stand mixer until smooth.
- Place the dough in a greased bowl and cover the with a plate, foil, or plastic wrap.
- Allow to rest in a warm place overnight, or for up to 12 hours.
- The next day or after 12, preheat the oven to 360 degrees Fahrenheit.
- Lightly coat the counter with a little bit of oil, and roll out the dough into a 1/4-inch thick rectangle.
- Coat the dough with the butter.
- In a separate bowl, mix the sugar and cinnamon.
- Generously dust the dough with the cinnamon-sugar mixture and grated apples. Spread evenly.
- Eveningly cut 1-inch to 1.5-inch strips out of the dough.
- Roll up each bun as neatly as you can and leave about 1 inch off the end to tuck it under the bun.
- This recipe should make 12 even buns.
- Lightly brush heavy whipping cream on a large baking sheet covered with parchment paper or a silicone mat.
- Place each bun onto a large spaced-out.
- Lightly coat each bun with the eggwash.
- Bake at 360 degrees for 20-25 minutes or until the buns are lightly browned and the dough is cooked through. Allow them to cool for about 5 minutes.
- While the buns are baked, prepare the cream cheese icing.
- In a separate bowl, add the cream cheese, butter, sifted powdered sugar, and vanilla extract or paste and mix well.
- Pour as little or as much of the cream cheese icing over each cinnamon bun and enjoy 😊 .
